Beef Tips and Gravy
Serves 6 people

Ingredients
1 ½ pounds sirloin or chuck, cut in 1 inch cubes
3 tablespoons flour
2 teaspoons brown sugar
Salt
Garlic powder
Onion powder
Smoked paprika
Oil
Gravy Ingredients
¼ cup dry red wine
2 tablespoons butter
1 large onion, diced
2 ¼ cups beef broth
1 tsp worcestershire sauce
3 tablespoons cornstarch
Recipe Instructions
Cut your choice of beef and mix with the flour, brown sugar, and seasonings.
Heat a pan with 1 tablespoon oil over medium-high heat until lightly smoking.
Add the beef and let brown on all sides, about 30 seconds per side. Take out and rest on a plate.
Pour the wine and scrape any of the brown bits on the bottom of the pan, cook until the wine is reduced by half its original volume.
Add butter and onions and cook until softened.
Add the garlic and stir for about 30 seconds to prevent burning.
Add the worcestershire and beef broth to the pan and bring to a boil.
Remove from heat after it just starts to boil then add the mixture, the beef and the juices into a crockpot.
Set the crockpot to low for 7 hours, or on high for 3 hours.
Combine ¼ cup of beef broth and cornstarch to a bowl and whisk until clump-free, add to the crock pot and stir to combine.
Let sit on low for another 30 minutes until thickened.
