Fluffy Mashed Potatoes

Ingredients
2 pounds Russet potatoes, cut into 2 inch chunks
Butter, 1 stick or ½ cup
½ cup milk or heavy cream
Salt
Pepper
1/4 tsp Nutmeg, grated
Recipe Instructions
Peel potatoes and cut into 2 inch chunks.
Bring 2 quarts of water to a boil and add the potatoes and 1 tablespoon salt.
Boil potatoes until they fall apart after a fork has been inserted, drain and rinse off any excess starch under warm water.
Let potatoes rest for 30 seconds to evaporate excess water.
Press potatoes through a ricer into the pot.
Create a well, pushing the potatoes to the sides of the pot.
Add the butter and heavy cream to the middle of the well and heat over medium heat until butter has melted. Season with nutmeg, salt and pepper.
Gently fold potatoes, cream and butter together.
