Meatloaf

Serves 8 people

Ingredients

  • 2 pounds ground beef

  • 1 Carrot, roughly chopped

  • 1 Small onion, roughly chopped

  • 1 Rib of celery, roughly chopped

  • 4 oz mushrooms, washed

  • Garlic cloves

  • 2 large eggs

  • ¾ cup panko bread crumbs

  • ⅓ cup buttermilk

  • Salt

  • Pepper


Sauce Ingredients

  • ¾ cup ketchup

  • 2 tbsp brown sugar


Recipe Instructions

  1. Preheat oven to 375°

  2. Roughly chop carrots, celery, and onion. Wash mushrooms.

  3. Add carrots, celery, onion and mushrooms to the food processor and pulse until well minced.

  4. Add ground beef to the food processor and pulse until combined with vegetables.

  5. Add breadcrumbs, milk, eggs, salt and pepper and pulse again until combined. 

  6. Line a large tray with aluminum foil and scoop out mixture onto the tray.

  7. Form mixture into a loaf and bake for 40 minutes.

  8. While the meatloaf bakes, mix ketchup and brown sugar until sugar is dissolved.

  9. After 30 minutes, remove the meatloaf from the oven and pour sauce on top. Return to oven for 10 more minutes.

  10. Rest meatloaf for 10 minutes before slicing, serve with our delicious simple sides and enjoy! Don't forget to leave a rating below!
