Roasted Potatoes

Serves 7 people

Ingredients

  • 4 pounds Russet potatoes, cut into 2 inch chunks

  • ½ teaspoons baking soda

  • Parmesan

  • Oil

  • Salt

  • Pepper

  • Parsley


Recipe Instructions

  1. Preheat oven to 450°

  2. Peel and cut potatoes into 2 inch chunks.

  3. Bring 2 quarts of water to a boil, add baking soda, 2 tablespoons salt and potatoes and stir.

  4. Cook until potatoes are tender but still hold together when poked with a fork.

  5. Drain potatoes and add to a bowl with 4 tablespoons oil, cover and shake for about 15 seconds.

  6. Spread out potatoes into an even layer on a tray and sprinkle with parmesan cheese

  7. Roast for 20 minutes, scrap and flip potatoes, then continue roasting for another 30 minutes.

  8. Put finished potatoes in a bowl, season with more salt, pepper and parsley.
