Roasted Potatoes

Ingredients
4 pounds Russet potatoes, cut into 2 inch chunks
½ teaspoons baking soda
Parmesan
Oil
Salt
Pepper
Parsley
Recipe Instructions
Preheat oven to 450°
Peel and cut potatoes into 2 inch chunks.
Bring 2 quarts of water to a boil, add baking soda, 2 tablespoons salt and potatoes and stir.
Cook until potatoes are tender but still hold together when poked with a fork.
Drain potatoes and add to a bowl with 4 tablespoons oil, cover and shake for about 15 seconds.
Spread out potatoes into an even layer on a tray and sprinkle with parmesan cheese
Roast for 20 minutes, scrap and flip potatoes, then continue roasting for another 30 minutes.
Put finished potatoes in a bowl, season with more salt, pepper and parsley.
