The best crunchy and flavorful fried chicken.


Crunchy Fried Chicken

Serves 6 people

Serving size - 8 oz piece

Ingredients

  • 4 pounds Chicken

  • 1 cup Buttermilk

  • 1 egg

  • 1 1/2 cups Flour

  • 1/2 cup Cornstarch

  • 1 tsp Baking powder

  • Salt

  • Oil


Recipe Instructions

  1. Whisk buttermilk, egg and 1 tablespoon salt together in a bowl and add chicken, let marinate in fridge for at least 30 minutes.

  2. Preheat fryer to 350°

  3. Whisk together flour, cornstarch, baking powder and seasonings of your choice.

  4. Add in a few tablespoons of marinade to the flour mixture and mix with a fork or your finger tips. This creates a nice craggly crust.

  5. Coat the chicken one piece at a time, shake off excess flour and add it to the fryer.

  6. Once you add the fryer, drop the temperature to 300 and let chicken cook slowly until it registers 160 degrees in the thickest part, it will reach 165 degrees as it rests.

  7. Reheat fryer to 350° and repeat steps 5 and 6 for the remaining pieces of chicken.

  8. Serve with any of our delicious sides and enjoy! Don't forget to leave a rating below!

Notes

To make gluten free use 2:2:1 ratio of white rice flour, brown rice flour, and tapioca starch.


Two ways to shake off excess flour, shake in a brown paper bag or shake off in fine mesh strainer. In our experience, paper bag results in a crust closer to KFC while mesh strainer results in crust closer to Chick-fil-A.
