Chicken Noodle Soup

Serves 8 people

Serving size - 8 oz bowl

Ingredients

  • 1 cup Celery, diced

  • 1 cup Carrots, diced

  • Garlic, minced

  • 2 cups Rotisserie chicken, shredded

  • 4 cups Chicken broth

  • 1 packet of gelatin

  • Oil

  • Salt

  • Pepper

  • Rosemary

  • 2 Bay leaves

  • 16 oz Pasta of your choice

Recipe Instructions

  1. Heat 2 tablespoons oil in a large pot over medium-high heat.

  2. Add salt, pepper and rosemary and stir for about 30 seconds or until fragrant.

  3. Add celery, carrots and garlic, let saute for about 2 minutes.

  4. Stir in garlic then pour in 3 cups of chicken broth.

  5. Add bay leaves and bring broth to a boil.

  6. Cook pasta of your choice in the pot according to package instructions.

  7. Shred rotisserie chicken while pasta cooks.

  8. Once pasta is cooked, remove from heat. Add chicken and stir to combine.

  9. Bloom 1 packet of gelatin in the remaining cup of chicken broth, after 30 seconds add it to the pot and stir.
