A cheesy pasta with a smokey twist.

Cheese Pasta
Serves 6 people
Serving size - 8 oz portion

Ingredients
16 oz Penne pasta, uncooked
2 cups + 1/2 cup Mozzarella, shredded
1 1/2 cups Parmesan, shredded
3/4 cups Gouda, shredded
4 slices American cheese, diced
3 cups Heavy whipping cream
2 14.5 oz cans of fire-roasted diced tomatoes
1 cup Onions, diced
Garlic, minced
Salt
Pepper
White wine (optional)
Recipe Instructions
Preheat oven to 400°
Combine cheeses in a bowl and set aside, reserving 1/2 cup of mozarella.
Boil pasta according to package instructions.
Drain pasta and pour into empty casserole dish and stir in diced tomatoes.
Heat oil in a pan over medium heat until shimmering, add onions and cooked until softened. Add garlic and stir for 30 seconds or until fragrant.
If using wine, add now and let reduce to 1/3rd of its original volume. Otherwise move on to the next step.
Add heavy cream to pan and maintain at a simmer until slightly thickened.
Remove from heat and add in cheeses in 1/2 cup batches and stir until melted, season with salt and pepper and other desired seasonings.
Pour cheese mixture over pasta and tomatoes and mix until combined.
Sprikle 1/2 cup mozarella cheese on top of the pasta and bake for 20 minutes or until mozarella has lightly browned on top.
Let rest for 15 minutes and enjoy! Don't forget to leave a rating below!
